My client wants to accept the credit card info and then process it manually by himself.

I need to save the credit card info and be able to retrieve it through the store admin.

I noticed that this is an option under your payment settings. (and it seems to be working in your demo)

I have selected "manual gateway" and then I edited the settings and selected the check box for "Display Full Credit Card Number at StoreAdmin"

But when I go to view an order, the card number is changed to all "0"s and there is no expiration or other card info (it is all blank).

I have not set up my SSL yet, could that be the issue?

No, storing customers' secure code in any means is against credit card company rules and will get you into big trouble.
