Go to Settings > Dashboard and make changes there.

I have a similar issue.

I would like my dashboard to display all items which are not marked complete.

I guess the work around would just be to use "In Progress" as the status, but that eliminates any items that are "On Hold" from being displayed.
I will have to ask my client if this will be an issue.

There should be a way to display all except a certain status or criteria.
