In category's how do I get rid of the "HOME" one that was there from the start...because when someone clicks store, I want a page of products to load up
Go to Setting > Category, unckeck Include Root Name:
Another way to fix this is to define default category for product list module. This can be done in module setting screen.
How do I define default category for product list module? Where is "module setting screen"? Can you tell the exact store admin menu entry?

In DNN, there is a module setting section for each module. You can access it when your dnn site is in edit mode. It's usually at left upper corner of a module.
